Creamy Cauliflower Soup

Ingredients

- 3 cups water, plus
- 3 cups vegetable broth
- 4 cups cauliflower, chopped
- 2 cups sliced carrots
- 1/2 cup chopped onion
- 2 tablespoons chopped parsley
- salt
- pepper
Recipe
- 1 in a 5-quart saucepan, add all ingredients except salt and pepper.
- 2 cover and simmer until vegetables are tender (about 20 minutes).
- 3 strain off and reserve most of the liquid.
