Creamy Cauliflower Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 3 cups water, plus
  • 3 cups vegetable broth
  • 4 cups cauliflower, chopped
  • 2 cups sliced carrots
  • 1/2 cup chopped onion
  • 2 tablespoons chopped parsley
  • salt
  • pepper

Recipe

  • 1 in a 5-quart saucepan, add all ingredients except salt and pepper.
  • 2 cover and simmer until vegetables are tender (about 20 minutes).
