Cauliflower And Gorgonzola Cheese Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cauliflower
  • 1/2 onion
  • 4 green onions
  • 1/4 cup gorgonzola
  • 1/2 cup water
  • 1 -2 carrot, chopped
  • salt
  • pepper
  • parsley
  • thyme

Recipe

  • 1 steam cauliflower in water until soft (reserve water).
  • 2 sauté onions in separate pan.
  • 3 combine onions and cauliflower with water and bring to boil and puree with hand mixer.
  • 4 cook over low heat.
  • 5 add carrots.
  • 6 salt and pepper to taste.
  • 7 just before carrots are tender add gorgonzola, parsley and thyme.
  • 8 serve with croutons or tortilla strips.
