Cauliflower And Gorgonzola Cheese Soup

Ingredients
- Servings: 4
- 1 cauliflower
- 1/2 onion
- 4 green onions
- 1/4 cup gorgonzola
- 1/2 cup water
- 1 -2 carrot, chopped
- salt
- pepper
- parsley
- thyme
Recipe
- 1 steam cauliflower in water until soft (reserve water).
- 2 sauté onions in separate pan.
- 3 combine onions and cauliflower with water and bring to boil and puree with hand mixer.
- 4 cook over low heat.
- 5 add carrots.
- 6 salt and pepper to taste.
- 7 just before carrots are tender add gorgonzola, parsley and thyme.
- 8 serve with croutons or tortilla strips.
