Cauliflower Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 4 cups cauliflower, coarsely chopped
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 3 cups chicken stock
  • 1/2 cup parmesan cheese, finely grated
  • salt & freshly ground black pepper (to taste)

Recipe

  • 1 heat oil in pot on medium heat.
  • 2 add onion and garlic and saute until soft.
  • 3 add cauliflower and chicken stock. cook the cauliflower until it is tender, about 15 minutes.
  • 4 using a hand blender, puree cauliflower until it reaches desired consistency.
  • 5 add parmesan, salt, and peper.
