Cauliflower Soup

Ingredients
- Servings: 6
- 4 cups cauliflower, coarsely chopped
- 1 tablespoon extra virgin olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 3 cups chicken stock
- 1/2 cup parmesan cheese, finely grated
- salt & freshly ground black pepper (to taste)
Recipe
- 1 heat oil in pot on medium heat.
- 2 add onion and garlic and saute until soft.
- 3 add cauliflower and chicken stock. cook the cauliflower until it is tender, about 15 minutes.
- 4 using a hand blender, puree cauliflower until it reaches desired consistency.
- 5 add parmesan, salt, and peper.
