Chicken Rice Casserole

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 2 cups cubed cooked chicken
  • 2 cups cooked rice
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 1 (4 1/2 ounce) jar sliced mushrooms, drained
  • 2 celery ribs, thinly sliced
  • 3/4 cup mayonnaise
  • 1 tablespoon chopped onion
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/3 cup crushed saltine crackers (about 10 crackers)
  • 1 tablespoon butter, melted

Recipe

  • 1 in a large bowl, combine the first 10 ingredients.
  • 2 transfer to a greased 2 1/2 quart baking dish.
  • 3 combine the cracker crumbs and butter; sprinkle over the top.
  • 4 bake, uncovered, in a preheated 350° oven for 30-35 minutes or until bubbly.
