Creamy Carrot & Orange Soup

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 tablespoons butter
  • 1 cup onion, chopped
  • 1 lb carrot, peeled and sliced & cooked
  • 2 cups chicken stock
  • 1/2 cup fresh orange juice
  • salt and pepper
  • 1/4 teaspoon ground nutmeg
  • 4 tablespoons whipping cream or 4 tablespoons yogurt
  • grated orange rind (for garnish)

Recipe

  • 1 brown the onion in the butter until soft.
  • 2 put onions carrots and chicken stock in a sauce pan.
  • 3 add orange juice, heat to meld the flavors.
  • 4 puree in a food processor until very smooth season with salt& pepper and return to saucepan and blend in the nutmeg.
  • 5 bring to a boil stirring during cooking time.
  • 6 to serve top and swirl in two tbsp of cream (or yogurt).
