Creamy Carrot & Orange Soup

Ingredients

- 2 tablespoons butter
- 1 cup onion, chopped
- 1 lb carrot, peeled and sliced & cooked
- 2 cups chicken stock
- 1/2 cup fresh orange juice
- salt and pepper
- 1/4 teaspoon ground nutmeg
- 4 tablespoons whipping cream or 4 tablespoons yogurt
- grated orange rind (for garnish)
Recipe
- 1 brown the onion in the butter until soft.
- 2 put onions carrots and chicken stock in a sauce pan.
- 3 add orange juice, heat to meld the flavors.
- 4 puree in a food processor until very smooth season with salt& pepper and return to saucepan and blend in the nutmeg.
- 5 bring to a boil stirring during cooking time.
- 6 to serve top and swirl in two tbsp of cream (or yogurt).
