Creamy Cheddar Soup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 small onion, diced
  • 2 large pimientos, diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups chicken stock
  • 1 1/2 cups cream
  • 3/4 cup grated sharp cheddar cheese
  • 1/2 cup green onion
  • salt and black pepper
  • 1 dash cayenne pepper (optional)

Recipe

  • 1 in a saucepan, saute onion and pimentos in butter for 5 to 7 minutes.
  • 2 blend in flour.
  • 3 add stock and cream.
  • 4 cook until thick.
  • 5 add cheese and stir until melted.
  • 6 add 1/4 cup green onions, salt and pepper, to taste, and cayenne if desired.
  • 7 garnish with remaining green onions.
