Creamy Cheddar Soup

Ingredients
- Servings: 4
- 1 small onion, diced
- 2 large pimientos, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups chicken stock
- 1 1/2 cups cream
- 3/4 cup grated sharp cheddar cheese
- 1/2 cup green onion
- salt and black pepper
- 1 dash cayenne pepper (optional)
Recipe
- 1 in a saucepan, saute onion and pimentos in butter for 5 to 7 minutes.
- 2 blend in flour.
- 3 add stock and cream.
- 4 cook until thick.
- 5 add cheese and stir until melted.
- 6 add 1/4 cup green onions, salt and pepper, to taste, and cayenne if desired.
- 7 garnish with remaining green onions.
