Beet And Apple Soup

Ingredients

- 1 tablespoon olive oil
- 1 teaspoon butter
- 2 apples, peeled and thinly sliced
- 1 carrot, peeled and thinly sliced
- 1 stalk celery, thinly sliced
- 2 (14 ounce) cans beets, drained
- 1 cup apple juice
- 1 cup chicken broth
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon chicken bouillon powder
- 1/4 cup cream (optional)
Recipe
- 1 heat oil and butter in saucepan. place apples, carrots and celery in pan and sauté, covered until softened.
- 2 add beets, juice, broth, bay leaf, salt and pepper. bring to a low boil and cook covered about 20 minutes. remove bay leaf.
- 3 puree soup with an immersion blender. add cream just before serving.
