Beet And Apple Soup

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1 teaspoon butter
  • 2 apples, peeled and thinly sliced
  • 1 carrot, peeled and thinly sliced
  • 1 stalk celery, thinly sliced
  • 2 (14 ounce) cans beets, drained
  • 1 cup apple juice
  • 1 cup chicken broth
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon chicken bouillon powder
  • 1/4 cup cream (optional)

Recipe

  • 1 heat oil and butter in saucepan. place apples, carrots and celery in pan and sauté, covered until softened.
  • 2 add beets, juice, broth, bay leaf, salt and pepper. bring to a low boil and cook covered about 20 minutes. remove bay leaf.
  • 3 puree soup with an immersion blender. add cream just before serving.
