Blt Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 8 slices bacon, cut into 2-inch pieces
  • 1 medium onion, chopped
  • 1 -2 stalk celery, chopped
  • 3 cups beef broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 tablespoon worcestershire sauce
  • 1/4-1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1 dash hot sauce (optional)
  • 2 cups shredded lettuce

Recipe

  • 1 in a large pot cook bacon until crisp.
  • 2 transfer bacon to paper towels to drain. when cool enough to handle crumble the bacon. discard all but 2 tablespoons of the drippings.
  • 3 saute the onions and celery in the pan drippings until soft, about 8 minutes.
  • 4 add the broth, tomatoes, worcestershire, garlic powder, parsley, pepper, thyme, and hot sauce if desired; bring to a boil. reduce heat and simmer for 15-20 minutes.
  • 5 serve immediately topped with bacon and shredded lettuce.
