Budget Friendly Creamy Onion Soup

Ingredients

- 2 quarts beef broth
- 2 large onions, sliced thick, then quartered
- 2 garlic cloves, minced
- 1 teaspoon salt
- 3/4 cup all-purpose flour
- 1 cup heavy cream
- 1/2 cup shredded monterey jack cheese
- crouton (optional)
- 1/2 cup water
Recipe
- 1 in large heavy pot, over medium heat, bring broth to a boil.
- 2 place onions, salt, garlic into broth.
- 3 lower heat to medium, simmer 30 minutes.
- 4 in a small bowl, stir flour into water until smooth.
- 5 gently stir this mixture into broth until well incorperated.
- 6 simmer 30 minutes more.
- 7 stir in cream and cheese .
- 8 stir gently, until cheese is melted and soup is warmed through.
