Creamy Curried Chicken- Rice Soup

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 2 large carrots, diced
  • 2 celery ribs, diced
  • 1 small onion, chopped
  • 3/4 cup butter
  • 3/4 cup flour
  • 1 teaspoon seasoning salt
  • 1/2-1 teaspoon curry powder
  • 3 (12 ounce) cans evaporated milk
  • 4 cups chicken broth
  • 2 -3 cups cubed cooked chicken or 2 -3 cups turkey
  • 2 cups long grain rice, cooked

Recipe

  • 1 in a large pot, saute carrots, celery, in butter for 2 mins.
  • 2 stir in flour, seasoned salt and curry until smooth.
  • 3 gradually add milk.
  • 4 bring to a light boil; cook and stir for 2 mins, or until thickened.
  • 5 gradually add broth; reduce heat, simmer, uncovered for 10 mins, or until veggies are tender.
  • 6 add cooked rice to soup, and serve.
