Creamy Curried Chicken- Rice Soup

Ingredients
- Servings: 6
- 2 large carrots, diced
- 2 celery ribs, diced
- 1 small onion, chopped
- 3/4 cup butter
- 3/4 cup flour
- 1 teaspoon seasoning salt
- 1/2-1 teaspoon curry powder
- 3 (12 ounce) cans evaporated milk
- 4 cups chicken broth
- 2 -3 cups cubed cooked chicken or 2 -3 cups turkey
- 2 cups long grain rice, cooked
Recipe
- 1 in a large pot, saute carrots, celery, in butter for 2 mins.
- 2 stir in flour, seasoned salt and curry until smooth.
- 3 gradually add milk.
- 4 bring to a light boil; cook and stir for 2 mins, or until thickened.
- 5 gradually add broth; reduce heat, simmer, uncovered for 10 mins, or until veggies are tender.
- 6 add cooked rice to soup, and serve.
