Chilled Fruit Soup

Ingredients
- Servings: 4
- 40 g pureed green limes
- 250 g mango puree
- 100 g passion fruit puree
- 100 g apricot puree
- 1 vanilla pod
- 1 whole orange, zest of, only
- 1 whole lemon, zest of, only
- 200 g water
- 150 g sugar
Recipe
- 1 put all ingredients into a heavy-base pot.
- 2 bring to a boil.
- 3 fill basin of water with ice cubes.
- 4 cool down the boiled ingredients in the ice bath prepared.
- 5 opt to garnish with berries and fruits as follows : kiwi, strawberries, oranges (cut into cubes); raspberries and blueberries.
- 6 soup should be chilled for minimum 1 hour before serving.
