Ingredients

- 5 cups honeydew melon, chopped
- 1 large cucumber, peeled and chopped
- 1/2 cup low-fat yogurt or 1/2 cup nonfat yogurt
- 2 scallions, roughly chopped
- 1 tablespoon fresh lemon juice
- 2 teaspoons fresh grated lemon zest
- 2 tablespoons fresh mint, chopped
Recipe
- 1 in a blender, puree honeydew melon until smooth. add cucumber, yogurt, scallions, lemon juice, and lemon zest and puree until smooth. transfer to a covered container and refrigerate until chilled.
- 2 sprinkle with mint and serve.
