Chilled Melon Soup With Mint (south Beach Diet Phase 2)

Ingredients

  • Servings: 4
  • 5 cups honeydew melon, chopped
  • 1 large cucumber, peeled and chopped
  • 1/2 cup low-fat yogurt or 1/2 cup nonfat yogurt
  • 2 scallions, roughly chopped
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons fresh grated lemon zest
  • 2 tablespoons fresh mint, chopped

Recipe

  • 1 in a blender, puree honeydew melon until smooth. add cucumber, yogurt, scallions, lemon juice, and lemon zest and puree until smooth. transfer to a covered container and refrigerate until chilled.
  • 2 sprinkle with mint and serve.
