Chilled Cucumber Riesling Soup

Ingredients

- 1 large english cucumber, peeled and seeded
- 1/2 cup fresh coriander leaves, loosely packed
- 1 small onion, peeled and diced
- 1/2 cup riesling wine
- 1/2 cup yoghurt
- 1 teaspoon sea salt
- 1/4 teaspoon ground cumin
- fresh ground pepper
Recipe
- 1 chop cucumber into one inch chunks. place cucumber chunks into food processor, add corriander and onion. process until very finely and evenly chopped but not pureed.
- 2 in a large bowl, whisk together the wine, yoghurt, salt and cumin. stir in chopped cucumber mixture. season with pepper and chill (3 hours).
