Chilled Cucumber Riesling Soup

Ingredients

  • Servings: 4
  • 1 large english cucumber, peeled and seeded
  • 1/2 cup fresh coriander leaves, loosely packed
  • 1 small onion, peeled and diced
  • 1/2 cup riesling wine
  • 1/2 cup yoghurt
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground cumin
  • fresh ground pepper

Recipe

  • 1 chop cucumber into one inch chunks. place cucumber chunks into food processor, add corriander and onion. process until very finely and evenly chopped but not pureed.
  • 2 in a large bowl, whisk together the wine, yoghurt, salt and cumin. stir in chopped cucumber mixture. season with pepper and chill (3 hours).
