Chilled Artichoke Soup

Ingredients

- 1 (10 ounce) can artichoke hearts
- 1 1/4 cups chicken stock
- 1/2 teaspoon salt
- 1/4 teaspoon oregano, crushed
- 1 -2 tablespoon lemon juice
- 1 cup light cream
Recipe
- 1 drain artichoke hearts and puree in blender with chicken stock, seasonings, and lemon juice. pour into saucepan and heat slowly. cool. add cream and mix well. chill thoroughly. serve in chilled bowls with one of the following garnishes: chopped parsley, chopped chives, sliced lemon or lime, or sour cream.
