Cheddar Cheese Soup

Ingredients

  • Servings: 6
  • 2 cups potato and leek soup
  • 3 cups milk
  • freshly ground nutmeg
  • 1/4 teaspoon hot sauce
  • 1 teaspoon ground cumin
  • 2 cups medium cheddar or 2 cups old cheddar cheese
  • salt and pepper

Recipe

  • 1 in a saucepan, combine soup base and milk with nutmeg; bring to a simmer.
  • 2 whisk in hot sauce and cumin; stir in cheese(do not let soup boil after cheese is added).
  • 3 season to taste with salt and pepper.
